It’s been a while since I made buttermilk pancakes every Saturday morning for the kids. Since I went low-carb years ago, pancakes have fallen out of the mix.
I was on Breakfast Patrol for four-year-old Violet this morning and I thought it would be nice to make a small batch of pancakes. No buttermilk in the fridge, but I had some really nice Irish-Style Wholemeal Flour from King Arthur Flour.
Here is the Recipe for what I made. The orange juice reacts well with the baking powder to make lots of bubbles in the batter and to lighten up the heavy wheatmeal. These had a great texture, moist and even fluffy – which is hard to get with wholegrains.Orange Irish-Wholemeal Pancakes
Wholemeal Orange Juice Pancakes (no Milk)
1 cup orange juice
1 tbsp vegetable oil
1 cup wholemeal (wholegrain) flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Whisk the juice, egg, and oil; stir in dry ingredients. Makes about four 6″ pancakes, about 1/2 cup of batter each.
